Why Don’t High-Sodium Foods Always Taste Salty?
The U.S. FDA notes in “Sodium in Your Diet” that some foods may contain relatively high levels of sodium without tasting noticeably salty. This means sodium content cannot be judged by taste alone. This seemingly counterintuitive phenomenon also gives us a new way to understand where our perception of “saltiness” actually comes from.
Our tongue is not a sodium meter. The saltiness we actually perceive depends not only on how much sodium a food contains, but also on its food matrix Note 1 , fat and protein composition, texture, and how salt is distributed throughout the food. Research suggests that sodium may interact with proteins and other components, while different food structures can also affect sodium release Note 2 and saltiness perception Note 3 .
One interesting example is simply “where the salt is.” Research has found that, even when the total amount of salt is similar, an uneven distribution of salt can, under certain conditions, produce a stronger perception of saltiness. In other words, a surface-seasoned food may taste very salty from the first bite, while the same amount of salt dispersed throughout a more complex food structure may not produce the same sensory experience.
For commercial cooking equipment, this also highlights another useful point: consistency in flavor depends not only on the recipe, but also on the stability of the cooking process.
