Why Thermostats and High-Limit Controls Are Not Interchangeable
Recently, we came across a YouTube video demonstrating the replacement of a high-limit control on a commercial fryer. The video covers the basic concepts of high-limit tripping, inspection, and replacement, while also raising a common question in equipment servicing: If both a thermostat and a high-limit control sense temperature, why can’t they be treated as the same type of control? The answer is simple: although both respond to temperature, they serve completely different operating and safety functions.
The Thermostat Controls Normal Operating Temperature
A thermostat is primarily responsible for regulating temperature during normal equipment operation. In a commercial fryer, for example, once the operator sets the desired cooking temperature, the thermostat responds to the oil temperature detected by its sensing bulb. When the temperature reaches the setpoint, the system shuts off or reduces the heat input. When the temperature drops, the heat source is activated again.
Through this repeated cycling process, the equipment maintains temperature within an appropriate operating range, helping support consistent food quality, temperature recovery, and cooking performance. The High-Limit Is the Second Line of Defense Against Overheating
A high-limit control, also known as an overtemperature safety control, is not intended to regulate normal cooking temperature. Instead, it interrupts the relevant control circuit and stops the heating process when abnormal conditions cause the temperature to exceed a predetermined safety limit. For example, if the operating thermostat fails to shut off the heat, the sensing bulb is improperly positioned, a control contact fails, or another component causes the equipment temperature to continue rising, the high-limit control serves as a second layer of protection.

Why Can’t They Be Directly Interchanged?
First, their operating logic is different. A thermostat is designed to cycle repeatedly during normal equipment operation, while a high-limit control should operate only when an abnormal overtemperature condition occurs.
Second, the two controls may differ in calibration temperature, contact configuration, voltage and current ratings, sensing bulb dimensions, capillary length, and mounting method. Even if two components appear similar, have similar connections, or carry similar temperature markings, this does not mean they are directly interchangeable.
Replacing a high-limit control with a standard thermostat may eliminate the equipment's independent overtemperature protection. Conversely, using a high-limit control for normal operating temperature regulation may prevent the equipment from functioning correctly because its trip temperature and reset logic are not designed for normal cycling operation.
Manual Reset and Automatic Reset Are Also Different
Alpha Brass Controls' ALCH is a manual-reset high-limit control. After an overtemperature event, the temperature must first fall to a safe level before the control can be manually reset. The ALCC, by contrast, is an automatic-reset high-limit control that can automatically reset once the temperature returns to its designed reset range. Robertshaw's technical documentation also notes that a manual-reset high-limit control cannot be forced closed by continuously pressing the Reset button while the overtemperature condition still exists. Field calibration and installation of high-limit controls should also be performed by qualified service personnel.
If a high-limit control repeatedly trips, simply resetting it over and over is not the proper solution. Service personnel should further inspect whether the operating thermostat is correctly shutting off the heat, whether the sensing bulb is properly secured in its designated position, whether the capillary tube has been damaged, and whether the gas valve, electrical wiring, and other control components comply with the original equipment design.
Two Controls, Two Different Safety Roles
Simply put:
- The thermostat answers: “Does the equipment need to keep heating?”
- The high-limit control answers: “Has the equipment become hot enough that heating must be stopped?”
One maintains the normal cooking temperature; the other protects against abnormal overheating. During component selection and servicing, the control function, calibration temperature, reset method, electrical load, and installation requirements must be evaluated separately in order to establish a stable and reliable temperature-control system for commercial kitchen equipment.
